David Trousselle is a tiny producer in the Hautes Cotes de Beaune and his Santenay Rouge is from a miniscule 0.3 hectare parcel. It’s a gorgeous Pinot Noir to be missed. The fruit is all destemmed and fermented with native yeast fermentation and aged in mostly neutral old barrel.
